I invented this pasta in my head when I was hungry at lunch and it was. THE BEST. 6 large tomatoes on the vine 5 cloves garlic 1/8 cup of good EVOO 1.5 wheels of Boursin Handful of basil 1 lb penne rigate 1 cup of pasta water S&P to taste - Chop tomatoes into chunks and add to an oven proof pan with the garlic cloves, chopped basil, EVOO and Boursin cheese in the middle. - Bake in the oven at 425F for 30-40 mins until tomatoes are broken down and most fluid is evaporated. Place tomatoes and garlic in blender (not cheese) pulse 5 times and stir back into pan with cheese. - Add in penne and pasta water as needed to make it creamy."
