Turmeric is the one that impacts flavor *significantly* so be light handed on it. #recipe #food #healthy #baking #healthyfood #plantbased #plantbaseddiet #plantbasedfood #healthyeating"

Cook's Illustrated on Instagram: "Why do cookie recipes call for both baking powder and baking soda? The answer is that the two work in tandem to create cookies that rise—and spread—to the right degree. Baking powder is responsible for lift, since it is engineered to produce most of its gas after the cookies go into the oven, where the dough sets before these bubbles can burst. But too much lift can mean cookies that turn out humped. Here’s where baking soda comes in: As long as there’s an acidic ingredient in the dough for it to react with, a small amount of baking soda can even things out. The bottom line: For a baker who likes their cookies just so, the use of both baking powder and baking soda can be a potent combo. Chewy Sugar Cookies recipe linked in bio."

Half Batch Baking on Instagram: "These cookies all start with the same recipe but use different types of molasses—light, dark, and blackstrap. The cookies resulted in different flavors, textures, and colors. Here is why: Light molasses (1st boil) = sweeter, softer cookies with a mild caramel flavor. Dark molasses (2nd boil) = chewier cookies with bold, rich flavors. Blackstrap molasses (3rd boil) = dense, hearty cookies with an intense bittersweet taste. The longer sugarcane juice boils, the more sugar is removed, concentrating the flavor and changing the chemistry. #molassescookies #molasses #gingersnaps #foodscience #holidayrecipes #learntobake Which one is your favorite?"
