I reckon I've eaten this salad every day nearly for the last 9 years 🤣 thanks to my business partner @thenutritioncoach who introduced me to the work of Dr Ray Peat all those years ago. Dr Ray Peat Ph.D is a biologist who did a lot of research into hormones and anti-ageing. Healthy sweet potato “nachos”
25min · 1 serving Ingredients • Half a sweet potato (sliced) • Half an avocado • handful of cherry tomatoes (diced) • 1/4 onion (diced) • 1/4 can black beans • 1/4 can kidney beans • Tbsp tomato paste • Garlic (diced) • Oil • Vinegar • Salt and pepper to taste • Lemon juice • chilli flakes • Paprika • Cajun spice Instructions • Slice sweet potato thinly, brush in oil ans season to taste and roast in oven at 180degrees for 15mins • Add all beans to a pan with tomato paste ans season • Smash the avocado, add garlic, lemon juice ans season to taste • chop tomatoes and mix with oil, vinegar, lemon juice and season to taste • Assemble and enjoy!
