Ingredients: - any veggies (I used broccoli, squash, onion, mushrooms, and peppers) - 1/4 cup avocado oil (more or less to taste just make sure everything is fully coated) - 1/4 cup Parmesan cheese - 3 tbsp pizza seasoning - salt and pepper to taste - 1 1/2 cup mozzarella cheese Directions: Preheat oven to 375 degrees. Wash and cut all the veggies and add them to a large bowl. Coat with oil, Parmesan and pizza seasoning and make sure everything is coated well. Add to a sheet pan (helps to use parchment paper!) top with mozzarella and bake for about 25-30 minutes. Keep an eye on it as cooking time will vary depending on what vegetables you use.
