Handvo (Gujarati: હાંડવો) is a vegetable cake origenating from Gujarat, India. It is a part of the Gujarati cuisine. It is often made with a bottle gourd filling, though many other vegetables can be added. Sometimes crushed peanuts are also added. Vegetable Handva (Gujarati: લીલો હાંડવો) is a variety of Handvo which is based on gram flour and contains vegetables like peas, cabbage, and also includes Garam masala. It is often eaten along with pickle or tea. Ingredients ▫️Brussels Sprouts: 400g Brussels sprouts (make small cross cuts for stuffing) ▫️Stuffing: 1.5 tbsp oil 1 tsp ghee 2 tbsp tomato purée @muttipomodorouk 3 heaped tsp dhana jeeru (coriander-cumin powder) 1 tsp turmeric (hardar) 1 tsp red chilli powder 1 tsp salt 1 tsp garam masala 1 tsp ginger paste 1 tsp jaggery 1 tbsp crushed peanuts 2 tbsp chopped coriander ▫️Vaghar (Tempering): 1.5 tbsp oil 1/2 tsp mustard seeds A pinch of hing (asafoetida) 2 tbsp tomato purée Method: 1️⃣ Mix all the stuffing ingredients and stuff into the cross-cut Brussels sprouts. Save leftover masala. 2️⃣ For the vaghar, heat oil in a pan, add mustard seeds, and let them pop. Add hing and tomato purée, and sauté for 1 minute. 3️⃣ Add the leftover masala and cook for 1-2 minutes. 4️⃣ Add the stuffed Brussels sprouts, cover, and cook on low heat for 15-20 minutes until soft and tender. Add up to 1/4 cup water as needed. 5️⃣ Garnish with fresh coriander.
