Red Bean Veggie salad:refreshing, flavorful and super nourishing
Ingredients: - 1 cup bell pepper, chopped. - 1 cup cooked corn kernels. - 1 cups red kidney beans. - 1/2 cup red onion, chopped. - 1 plum tomato, diced. - 1 avocado, cubed. - 1 jalapeno, sliced with seeds removed. - handful fresh cilantro, roughly chopped. - 4 tablespoons extra virgin olive oil. - 1/4 cup lime juice. - salt and pepper to taste. . Add all the veggies into a large bowl along with extra virgin olive oil, lime juice, salt and pepper. Toss well.
