Place the bowl over a pot of simmering water (make sure the bowl doesn’t touch the water). Whisk constantly until the sugar dissolves and the mixture reaches 160°F (70°C), about 5 minutes. 🌡️ 2️⃣ Whip the egg white mixture: Transfer the egg white-sugar mixture to a stand mixer or large mixing bowl. Beat on medium-high speed until stiff, glossy peaks form, and the bowl feels cool to the touch (about 10-15 minutes). ⏱️ 3️⃣ Add the butter gradually: With the mixer on medium speed, add the softened butter one cube at a time. Mix until fully incorporated and the buttercream is smooth and silky. ✨Extra Tips ⭐️If it curdles or looks like cottage cheese: Don’t panic! Continue mixing for 5-10 minutes, and it will come together. If it doesn’t, you can place the bowl in a warm spot or wrap it with a warm towel for a few minutes to help soften it, then keep mixing. 💪 ⭐️If the buttercream is too soft or soupy after adding the butter, chill it in the fridge for 10-15 minutes and then whip again until it firms up.
