With holiday season quickly approaching (crazy, right?), I thought it would be fun to share a few recipes that were a bit more elegant and fit for a holiday party. Even though I often make scallops and risotto for weeknight dinners, I think it’s also sophisticated enough for special occasions.

A rich and indulgent risotto nero makes a stylish supper, especially when it's paired with hand-picked Cornish crab. Venere black rice has a distinctive nutty flavour that's stunning slowly stirred with stock till it's tender. This Halloween inspired Black Rice risotto is the perfect recipe to bring some extra spookiness to your dinner! Using Black Rice instead of conventional risotto rice removes the need to continuously stir as you add stock, however it does mean that it takes longer to cook instead. The Black Rice together with the grated comte cheese provides a rich and nutty base which is elegantly balanced with the sweet and sharp Balsamic Vinegar.
