143K views · 13K reactions | My #1 hosting salad !! No matter what kind of event, dinner, or lunch I’m hosting, i’ll always have this artisan lettuce spears salad on my table. You can find these artisan lettuce spears also referred to as little gems at Costco. It’s the one dish that always finishes and that I can never make enough of. Everyone just loves the individual spears and that crunch !!!! Make as much or as little as you like or need for your hosting. Remember, each Romain is cut into quarters. The dressing is great to keep in the fridge and can last for months. Challah croutons are made from a left over challah bread cut into cubes. Tossed with some olive oil and salt, baked on a baking sheet lined with parchment paper at 350° Fahrenheit for about 15 minutes till slightly darker than golden brown. Dressing: •1/3 cup olive oil •1/3 cup fresh lemon juice •1/4 cup Dijon mustard with seeds •1/4 cup honey (you can use maple syrup if vegan) •1/4 cup rice vinegar •3 garlic cloves •1 tsp. salt •1 tsp. black pepper Directions: 1. Remove any outer layers from the Romaine lettuce. Cut into quarters, leaving the stem intact. 2. Soak the lettuce spears in a large bowl of water with 1/4 cup vinegar for 5-7 minutes. Rinse thoroughly a few times and shake off any excess water. 3. If not using a blender, mince the garlic for the vinaigrette. 4. Prepare the vinaigrette by blending or whisking together vinegar, garlic, olive oil, honey, salt, pepper, mustard and lemon juice. 5. Plate the lettuce spears on a platter, arranging them beautifully. Optional to add cherry tomatoes* 6. Drizzle each spear with the prepared vinaigrette. 7. Top with your favorite croutons or grated cheese of choice. 8. If you want to use rotisserie chicken, chicken breast, go ahead but this is what I'm using. Two cans of canned chicken. We're making a delicious, easy salad. Y'all are going to love this, alright? So, now we have bacon. Uh this is some bacon I cut. I cooked and cut up. So, we're going to put this in here as well. So, this is a delicious, easy chopped salad. Y'all are going to absolutely love this. Fred, don't this look good? Mm hmm. Looks beautiful, right? Mm hmm. Yup. Good. Good. Alright. So, now y'all we have this is some cooked pasta. This was a half cup of dry pasta that I cooked. Alright, so we're putting this in here. We're using all of it. Just like so. Alright, I'm trying to get it out. I cooked it last night so that's why it's sticking a little but that's okay. Alright, y'all. It's going to be a delicious salad. Y'all are going to love this. Alright. Next, I have five ounces of feta cheese. Alright. So, I'm going to put the feta cheese right here. And then we also going to use blue cheese, four ounces. Again, y'all, do what makes you happy. Use what you want. You don't have to use what I'm doing. There's no rules said you have to do exactly what I do alright do what makes you happy if you don't like blue cheese leave it out if you like it add more do whatever you want okay so this is a copycat recipe from this this fast food restaurant outside of Chicago called Portillo's and it's a delicious salad y'all alright so we're going to move this to the side I make this for I'm making this for the Super Bowl party I make I make this all the time it's great so now we have a little cup right here what we going to do we have some Hidden Valley Ranch alright so we're going to put a cup of ranch right on in here. About a half cup. Alright. Now, y'all we also going to put in a half some balsamic vinaigrette. We put a half cup of this in. Yes, we mixing these dressings, alright? Half cup. There we go. Perfect. So, now y'all we gotta give this a little mixy mixy. Mixy mixy, mixy, mixy. Mix the dressings, mixy, mixy. That's a new remix of my song. Uh have you all ever had this salad? DB x INGREDIENTS ▪️600g baby potatoes ▪️1 tbsp dried oregano ▪️2 tbsp olive oil ▪️1 red onion, finely chopped ▪️1 cucumber, finely chopped ▪️200g cherry tomatoes, finely chopped ▪️170g olives, sliced Dressing ▪️200g greek yoghurt ▪️1/4 cucumber, grated and squeeze all the liquid out ▪️4 garlic cloves, minced ▪️Juice of 1/2 lemon ▪️Small handful of mint (I added coriander too), chopped ▪️Salt and pepper to taste METHOD ▪️Preheat oven to 200c ▪️Slice your potatoes in half. Now I'm going to add in some 95% lean ground beef that I cooked in taco seasoning. Tomato, some white onion, black beans, some pickled jalapenos, some reduced fat cheese, a little bit of crushed tortilla chips for a little bit of a crunch. Alright for the dressing we're going to use two heaping tablespoons of non-fat Greek yogurt. Two teaspoons of ranch seasoning. Three teaspoons of pickle juice. And just a tiny bit of sriracha for spice. And we're going to mix it up and I added a little bit of water to thin it out. She's looking pretty as always. Now we're going to add in our dressing right on top. I'm just going to add a little bit of guac right on top. Some light sour cream just a little bit. We're going to give it a good mix. You get a chip. Load that baby up. One of my top 10 favorite salads.
