Come winter & my kitchen is forever fragrant with seasonal veggies & winter delicacies.
Gajar ka halwa, makki ki roti, sarso ka saag, palak bathua poori, haldi ki sabzi & wt not. Also a Good time to enjoy dishes which are considered too hot (or गर्म तासीर as we say) for Mumbai weather otherwise. This week, it was Litti Choka ♥️ which is an authentic Bihari dish which is my absolute favourite!!!
Made by Roasting baingan (Aubergine) & tomatoes & adding boiled potatoes. To make it flavourful raw chopped onions, garlic, ginger, fresh coriander & green chillies are added. Seasoned with salt, some rock salt, lemon juice & add some hot mustard oil tadka with panch phoran which is mixture of cumin seeds, fennel seeds, rai, kaloji & methi daana along with heeng.
