We're going to grab our little silicone brush here and just brush that around. We're going to grab four flour tortillas and just place them on the bottom here overlapping. You can use corn if you like. I'm just a big flour tortilla lover and we have one cut in half. We're just going to place that right here to overlap. Now, we're going to grab our taco meat mixture. This is two pounds of ground beef with a little bit of garlic and sauteed onions. We're going to add one can of Rotel right on top. We're going to add one can of drained black beans on top of that. We're going to hit it with about a fourth of a cup of these diced green chilies from New Mexico. Really really delicious flavor there and we're going to pour the remainder of our enchilada sauce right over the top. Now, we're going to throw this back on the heat and we're going to saute this for about five minutes to make sure all those flavors get mixed up. After about 5 minutes, your medium mixture is done. We're going to put about a third of this on top of our tortillas here. We're just spoon it right on top we're going to spread this out into a nice layer here we have about four cups of cheddar jack cheese here we're going to put about a cup on top here and we're going to layer this bad boy this is a Mexican lasagna or you can call it taco lasagna whatever you want perfect for taco night perfect for any night of the week just layer this tortillas down we're going to go with another third of that meaty mixture just spoon it right on top this is very hardy you can do this with one pound of ground beef ground turkey, whatever you want. I'm using two today because I want this thing to be extra meaty. We're going to go with about another cup, cup and a half of this shredded cheese and then I'm going to add a little bit of queso fresco to this layer. Beautiful, delicious cheese. Just sprinkle it right on top. Now, we're going to go with another layer of, you guessed it, flour tortillas. We're going to put the final bit of our meat. We're going to do three total layers tortillas, meat, cheese, all the good stuff. Now, I a little bit of heat and I like to add jalapenos for garnish. The cool thing about these is if you don't like jalapenos, you can just slide them to the side, pick em off, whatever. We're going to do a nice layer. Our oven is preheated to 350 degrees. We're going to cover this, bake for about thirty, 35 minutes til that cheese is bubbling and last 5 minutes. We're going to take the foil off. Alright, our Mexican lasagna is done. We baked ours for about 30 minutes. Took the foil off and put it on broil for the last five minutes to get that nice golden crust. My wife loves the corner edge pieces so I'm going to cut myself a piece right out of the center. I'm using a knife to make sure I cut through all of those layers and wait til you see this, you guys. We're going to scoop ourselves out a portion and look at those beautiful lasagna layers, tortilla, meat, cheese. Just going to slide it on to our plate here and we're going to top ours with a little bit of sour cream and fresh chopped cilantro. Look at that you guys. Let's try a bite. I have a nice parchment liner there that makes it a lot easier. We're going to add in an entire white onion, yellow bell pepper, orange bell pepper, red bell pepper, we're going to add some minced garlic, about a tablespoon or two, ground cumin. Smoked paprika, an entire packet of Fajitas Spice, and a whole lime. Just going to squeeze that right over the top here. Try to get all that juice out. And we're going to mix everything up here in the air fryer basket want to get that chicken mixed with those peppers and onions all the seasoning and just keep mixing until it's ready this is starting to smell really good you guys all that seasoning lime is mixing well with the chicken and the peppers and onions now we're going to pop it to our air fryer we're going to set it to about 350 degrees for about 13 minutes we're going to come back and assemble our fajita Our fajitas are done and they smell delicious. Look at that. Perfectly cooked chicken, onions, peppers, everything looks delicious. Now, we're going to put our fajita meat down into our casserole dish lined with tortillas and filled with cheese. We're just going to pour our meat directly on top here. Look at that. You guys, spread it around. That is looking gorgeous. We're going to add a little more shredded Mexican cheese on top just like that. Apply the cheese generously just like that. We're going to add some chopped cilantro like that right there and now the fun part, we're going to add nacho cheese Doritos directly on top. This is going to be a nice base for our fajitas. Nice and crispy and delicious. Spread those out. Add a little bit more cheese on top. Just cover all those chips there and on top of that, we're going to add some peppers. My wife does not like heat. So, I'm going to put some diced serrano peppers on my half. We're going to fold everything up nicely and lightly press down we don't want to break up all those chips but we do want to compact it a little bit just like that and we're going to fold this over here and fold this over we're going to add a clear glass bowl on top just to weigh those tortillas down we're going to pop this in a 350 degree oven for about 25 to 30 minutes our fajitas are done and look at that beautiful crispy tortilla shell we're going to transfer this to a cutting board so to do that we're just going to put a cutting board directly on top and We're going to flip the whole thing over. Ready? Let's see. The big reveal. Oh my gosh, you guys. That is crispy and beautiful. We are going to cut into this beautiful fajita here and serve ourselves a nice portion. You ready for the reveal? Look at that you guys. Let's go ahead and put it on a plate and try a bite. This thing is so crispy. You don't even need a fork and knife. You can just pick it up with your hands and eat it. You could do your own seasoning however you like. That goes next. Right on top. Guys, we're going to follow that up with our enchiladas sauce. I'm using the mild. I really like this old El Paso. And finally some cheese. I like this queso quesadilla. It's super melty and super flavorful. So let's throw a bunch of this in there. I'm going to save a little to sprinkle over the top. And now we mix. That looks ready. And we're just going to dump this right out onto our sheet pan. And guys we'll go ahead and just spread this out. That looks perfect. I'm going to take the rest of my cheese. We're going to put some on right on top. Put as much or as little as you want guys. There's no rules here. Guys this next part's optional. I'm going to add some black olives to the top of mine. We just kind of spread them out. And I'm going to add a few jalapenos too. Guys that's ready for the oven. I'm going 375 degrees for about 25 minutes. Just going to get it nice and crispy. Little brown on top. It's going to be absolutely perfect. Look at that guys. That's ready. And guys 25 minutes was perfect for this. It's got a nice little brown crustiness on top. The edges are nice and crispy. So we're just going to throw that down on a plate. Now you can finish however you want. I'm going to add a little bit of crema to the top of mine. And then just finish with a couple slices of avocado. I think that's perfect. Just get in there and enjoy. Guys this is perfect for large groups. Goes great on game day. And really good when the weather's cold. Mm That is so good. That tastes just like an enchilada. I started with a package of grass fed beef from @traderjoes and added olive oil, salt, and taco seasoning generously.
