Ingredients: •1 head of purple cabbage •½ cup mayonnaise (any kind you prefer) •Juice from 1 lemon •Salt, to taste Instructions: Prepare the cabbage: Shred the purple cabbage finely using a sharp knife or a cabbage shredder. In all honesty, I didn’t measure out the exact quantities for the dressing so I’m just going to tell you what I did and I’m super confident you’ll be able to create it at home with ease and by tasting as you go: Ingredients for the dressing: 2 to 3 heaped tbsps crunchy, unsweetened peanut butter (qty depends on how big of a salad you’re making) 2 large grated garlic cloves 1 fat knob of peeled ginger, grated (or a half a tbsp ground ginger) 1 large, spicy chilli, finely chopped (I ended up adding in more chilli flakes for extra heat) A generous drizzle olive oil A generous drizzle sesame oil Juice of 2 to 3 limes A splash of maple syrup A splash of apple cider or white wine vinegar Soy sau
