Nutritional yeast is one of the ingredients that I was totally unaware of before entering the vegan world. I didn't know what it was, how to use it, if it was healthy, what it tasted like, where I could get it, etc. As time went by I started using it more and more. Now I use it a lot. Nutritional yeast is one of the ingredients that I was totally unaware of before entering the vegan world. I didn't know what it was, how to use it, if it was healthy, what it tasted like, where I could get it, etc. As time went by I started using it more and more. Now I use it a lot.

To make the pesto:
-Add the following to a blender: one large handful of blanched kale, one large handful of basil, one cup of cashews that have soaked in hot water for five minutes, the juice from one lemon, a third of a cup of nutritional yeast, 2 tablespoons of olive oil, half an avocado, 1 teaspoon of sea salt
-Blend well in a food processor or blender and add to cooked pasta

To make the home-made vegan Parmesan topping :
- Add grated cashews, nutritional yeast, salt, tomato flakes, ores go and chilli flakes into a bowl and mix well. Store in the cupboard and use to top pasta
