These molasses cookies are a classic. Two and 1/ 4 cup of flour, one and a half teaspoons of baking soda, a/ 4 teaspoon of ground cloves, one teaspoon each of cinnamon and ground ginger. Whisk together and set to the side. One cup of sugar, half a cup of butter, one egg and a healthy teaspoon of vanilla extract measured with your heart. Mix well. Add quarter cup of molasses. Mix some more. I'm going to add those dry ingredients a third at a time. I'm going to mix slowly and gently each time. Scrape that bowl down well and finish mixing this dough with a silicone spatula or a wooden spoon. Into the fridge to chill for at least an hour. You want this dough to be cold before you place them in the oven. I'm going to use a tablespoon. The cookie scoop don't really work well here and form each cookie into a nice round bowl. And drop on the cookie sheet. Each cookie will get gently flattened with a fork. And a small sprinkle of raw sugar on top. Into the oven at 350 degrees for 9 to 10 minutes. I left these in for nine minutes exactly. Is there anything better than a warm lassy cookie and a cold glass of milk. These will stay on the cookie sheet for five to 10 minutes before I remove to a wire cooling rack. But a gotta have a taste while it's warm. Time for a warm cookie taste. These might not be a Christmas treat per se but definitely a Newfoundland classic.
