I wanted to ask if there has been a research regarding the accuracy of the datas for scientific purposes. Do you guys or someone else tried to publish a paper or something?

Unfortunately, we did not thoroughly investigate the accuracy of LiveScan3D. There are however studies that investigate the accuracy of the Kinect sensor itself. Here is one: https://ieeexplore.ieee.org/abstract/document/8731876
The accuracy of our system would be the same as a Kinect if you consider a case where only 1 Kinect is used. The accuracy with more than 1 device will likely be lower due to two factors:
calibration error, i.e. the error in the relative pose of the two sensors,
