But anyway, I finally figured it out. Not hard, came down to a double bake and exact ratio of glue (peanut butter + honey) to muesli. Too much, and it gets chewy & softens overnight. Too little, and it falls apart! 

Endlessly customisable so an excellent allergen / pantry clean out recipe. Enjoy! - N x ❤️

CRUNCHY muesli bars (granola bars)
 
THE GLUE – 30 sec microwave then mix:
1/4 cup honey (90g)
1/4 cup natural peanut butter (60g) (not commercial spread like Bega, Skippy, Jif), sub cashew or hazelnut butter
MUESLI BARS:
1 1/2 cups rolled oats* (1 Bake Oats, Homemade Muesli Bars, Muesli Bar Recipe, Crunchy Granola Bars, Muesli Slice, Bars Recipes Healthy, Recipe Tin Eats, Muesli Recipe, Seed Cycling

And let’s be real, anything with chocolate chips is a win in my book. 🍫🙌   Muesli bar 200g unsalted butter 3/4 - 1 cup honey  2 tbsp brown sugar 4 cups rolled oats 1 cup rice bubbles 100g choc chips  In a microwave safe bowl, add in your butter, honey and brown sugar. Pop in the microwave for three minutes for the butter to melt and a mixture to start bubbling. Remove it from the microwave and add your oats and rice bubbles, give it a stir until everything is evenly combined. Pour your mixture into a lined baking tray, spread out evenly and press down firmly. Chill your bar for 2 to 3 hours or until it has firmed up.
