Sherri Davidson on Instagram: "GRANDMA’S CREAMY MUSHROOM ORZO: INGREDIENTS: - 1.5 cups orzo - 3 cups vegetable broth (or broth of choice) - 3 large portobello mushrooms (sliced 1/4 inch thick) - 1 large sweet onion (cut into thick wedges) - 2 cloves of garlic (chopped) - 1 cup heavy cream - 1 cup grated Parmesan cheese - salt and pepper to taste - 2 tbsp butter or olive oil THE SAUCE: Step 1: In a large skillet over medium heat, add in 2 tbsp butter and your chopped onion. Cook until slightly browned then add in your sliced portobello mushrooms. Cook for additional 2 minutes. Try to get a little sear on them this makes for a really nice meaty texture and flavor for your meal.
