Keto Protein Cookie Cheesecake Bars Recipe Ingredients: For the Cookie Base: 1 ½ cups almond flour ¼ cup coconut flour ½ cup sugar-free sweetener (like erythritol) 1 tsp baking powder ½ tsp salt 1 large egg ¼ cup melted coconut oil 1 tsp vanilla extract ½ cup sugar-free chocolate chips For the Cheesecake Filling: 8 oz cream cheese, softened ¼ cup Greek yogurt (or sour cream) 1 large egg ¼ cup sugar-free sweetener 1 tsp vanilla extract 1 scoop vanilla protein powder Instructions: 1️⃣ Prepare the Cookie Base: Preheat the oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper. In a bowl, combine almond flour, coconut flour, sweetener, baking powder, and salt. Add the egg, melted coconut oil, and vanilla extract. Stir until a dough forms. Fold in the sugar-free chocolate chips and press half the dough into the bottom of the prepared dish. 2️⃣ Make the Cheesecake Filling: In another bowl, beat the cream cheese, Greek yogurt, egg, sweetener, protein powder, and vanilla extract until smooth.
