Recipe for Stuffed Artichokes
Ingredients:
3 large Artichokes
1 1/2 cups grated Pecorino Romano Cheese
1 cup breadcrumbs
1/3 cup chopped parsley
2 tbsp of garlic
1/2 tbsp salt
1/2 tbsp black pepper
1/2 cup olive oil
Instructions:
Cut 1/3 of the top off of the artichoke and the stem. Trim off the pointy ends of the leaves and scoop out the center.
Place artichokes is cold water with the juice of 1-2 lemons.
In another bowl mix cheese, breadcrumbs, parsley, garlic, salt, pepper and olive oil. Mix together and stuff artichokes with the mixture.

Prepare artichokes by washing them in cold water and letting them sit for 15 minutes (this helps open them). Cut off stem so artichoke can stand flat. Slice 1/4 inch straight from the top.
