All you need: 2 cup all purpose flour 1/4 cup sugar 2 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt 2 large eggs 2 cups buttermilk 1/4 cup of vegetable oil or butter/ to get a light pancake, I find vegetable oil works best. 2 tsp vanilla extract 1 tsp vanilla bean paste/ optional Extra butter for the pan 1 tsp per pancake. Preparation: Mix the dry ingredients and set aside. Whisk the eggs, buttermilk and add the oil or melted butter, add the vanillas and mix.
