We are wassailing: what does a pagan ritual have to do with cider-making?

The Orchard Wassail is a ritual in it's own right, and is carried out on 17th January. The ceremony involves singing and drinking the health of trees in the hopes that the trees thrive and give a good harvest in the coming year, as well as thanking them for the previous years crop.
