Ahmad Noori on Instagram: "Gyoza | Recipe⬇️  To prepare the wrappers, Combine  -2 cups all purpose flour -1 tsp salt -3/4 cup hot water (or more if needed) Kneed until smooth. Cover and let it rest for 30 mins For the filling, add  -1/4 nappa cabbage  To a bowl and sprinkle some salt on top. Let it rest for 10 mins and squeeze out the liquid. Crumble  -1 block tofu into a bowl And add the cabbage as well as -2 spring onions, chopped -2 mushrooms, finely chopped -2 garlic cloves, minced -2 tsp ginger, minced -2 tbsp soy sauce -2 tsp sesame oil -1 tbsp potato starch And combine.  Roll out the dough and cut the dou into circles. Add 1 tsp of the filling to the centre of the wrapper and fold like in the video. Heat oil in a non-stick pan on medium high. Makes about 26 

For traditional dumplings, replace the mushrooms and edamame with shrimp and ground pork
 
Ingredients
2 Tbsp sesame oil, divided 
6 oz Shiitake mushrooms, thinly sliced, stems removed
1 ½ tsp soy sauce 
6 oz finely chopped cooked edamame
1 cup finely chopped Napa cabbage (Sui Choy) 
2 spring onions, thinly sliced 
1 tsp finely grated ginger 
¾ tsp finely grated garlic 
1 tsp kosher salt 
26 gyoza wrappers 
1 Tbsp vegetable oil 

 Heat 1 Tbsp sesame oil, add mushrooms and soy sauce; cook until soft, about 3 minutes.  Cool.
Combine edamame, cabbage, spring onions, ginger, garlic, salt, 1 Tbsp sesame oil and mushrooms.
