Southern Caramel Cake
Prepare the Cake: Preheat oven to 350°F (175°C). Grease and flour three 9-inch round cake pans. In a bowl, whisk together flour, baking powder, and salt. Cream butter and sugar until fluffy, then add eggs one at a time. Alternate adding dry ingredients and milk, beginning and ending with dry ingredients. Mix in vanilla. Divide batter evenly among pans and bake for 25–30 minutes. Cool completely. Make the Caramel Frosting: Melt butter in a saucepan over medium heat. Stir in brown sugar and evaporated milk, bringing to a boil. Remove from heat and whisk in powdered sugar and vanilla until smooth. Let cool slightly before frosting. Assemble the Cake: Layer the cakes with caramel frosting in between. Frost the top and sides generously.
