It only needs 3 ingredients but to get it right. It requires a few steps. Ingredients: - 1 & 1/2 cups of brown lentils - 3 onions (medium size) - 1 cup of bulgur (preferably coarse brown bulgur) - salt - olive oil - start by boiling the lentils In 4 cups of water, for 10 minutes until they’re almost cooked then set them aside. - dice the onions into medium sized cubes, then fry them in about 3 tablespoons of olive oil on medium heat. Now the trick is to keep stirring the onions for about 5 to 6 minutes till they start to brown and when they brown keep going for two more minutes until you see a very dark brown color on the edges. - the onions are not burned at this point. They are extremely dark brown. - Add the lentil water to the onions and mash the onions with a spoon to release that reddish brown color into the water, then add the lentils the bulgur with a pinch of salt mix it and if it needs more water, just add half a cup. - Once it boils the heat to a simmer. Cover and let it cook for two minutes. Uncover give it a gentle stir.
