In the U.S. shrimp are sold by count per pound. The number on the label indicates the number of shrimp in the package. If it reads 21/25, there should be from 21 to 25 shrimp in each pound. For appetizers, allow 2 to 3 (medium or larger) shrimp per person. For entrees, allow 4 oz per adult serving : Medium size & below, 9 to 11 shrimp; large to jumbo, 5 to 7 shrimp; extra jumbo & above, 3 to 5 shrimp. (For small children allow 2 oz per serving.)
