Tomato and eggs go together so well in this breakfast. This tomato egg recipe is inspired by the classic Chinese tomato egg stir-fry. But it makes it into an omelette style breakfast.

Serves 1

Ingredients:
1 medium/large tortilla
2-3 eggs, lightly whisked
Sea salt & cracked black pepper 
2-3 slices ham
1/2 tomato, sliced
1/4 avocado, sliced
1/4 cup tasty, mozzarella or cheddar cheese, shredded

Method:

1. Place a large frying pan (one that is about the size of the tortilla) onto medium heat. Season the eggs with salt and pepper. Add the whisked eggs and spread them out so they fill the frying pan. Leave them to cook for 3-4 minutes. Place the tortilla on top of the eggs, then flip the tortilla over with a spatula, so that the egg is facing up.

2. Add slices of ham, tomato and avocado to the left side of the tortilla. Then sprinkle over the grated cheese.
