This grilled oyster recipe is inspired by one of my all time favorite barbeque oysters at Hog Island in California. You slather the shucked oysters in chipotle bourbon butter and BBQ the oysters in their shell on the grill. The result is spicy, sweet briny perfection - and you can do it under the oven broiler too!

Miles Prescott doesn't remember exactly where he was the first time he tasted grilled oysters, but he knows he was in New Orleans and that the bivalves made an impression.

You can use any type of oyster that appeals to you, though you might want to get fairly large, meaty ones to hold in the oyster juices in the larger shell. Medium to large East Coast oysters, such as Island Creek oysters from Duxbury, Mass., work well. These oysters make an inviting appetizer at a backyard get-together.
