Ingredients: 1 box Earthbound Farm Organic Baby Kale 1 Delicata Squash 1 can Chickpeas 2/3 c Pomegranate Seeds 1 pear, sliced 1/3 Cranberries 1/3 c Sliced Almonds 1/3 c Parmesan Cheese Fresh Mint Tahini Vinaigrette Dressing: 1/3 c coconut aminos 2 tbsp tahini 1/2 lime juice 1 tbsp olive oil 1/3 tsp salt 1/3 tsp ground ginger black pepper to taste For the delicata squash: slice into rounds, remove the seeds. Toss in olive oil, salt and pepper. Bake at 400 F for 25 minutes flipping halfway though.
