Crispy CrissCross Sweet Potatoes
45min · 2 servings Ingredients • 2 large sweet potatoes, chopped into thick dice • 2 tbsp olive oil + 1 tsp mixed dried herbs • Large pinch salt 🥑For the dressing: • 1 creamy avocado • 2 tbsp chopped chives • 1 tbsp olive oil Salt & pepper Method: Start by cutting the sweet potato into even dice, then cross cross cut one side - careful not to slice all the way through like I did) Preheat the oven to 200°C fan Place the cross cross potatoes in a large baking dish, then brush with the oil & mixed herbs, sprinkle sea salt over the top then bake for around 40 minutes A good tip is to flip them halfway through baking so they absorb all of those delicious flavours from the oil Once soft in the middle and crispy on top, take out of the oven Mash the dressing ingredients tog
