Ingredients: 1 very overripe large banana, mashed 1/2 cup greek yogurt 1/4 cup maple syrup 2 eggs 1 tsp vanilla 1 tsp baking soda 2 tsp ground cinnamon 1/2 tsp nutmeg 2-3 carrots, finely grated (about 1 & 1/4 cups) 2/3 cup rolled oats 1 cup oat flour 1/2 cup coconut flour or oat flour Pinch of salt Bake for 40 mins at 350°F Frosting is about 1/4 cup cream cheese, 1 tbsp lemon juice, 3-4 tbsp maple syrup ENJOY!!!! Recipe below 👇 Ingredients: 1/4 cup Ground Flax 1/4 cup Filtered Water 1 cup Rolled Oats 1 cup Shredded Coconut, Unsweetened 150 g Pitted Medjool Dates (8-9 dates) 1 cup grated Carrot 1 Tbsp grated fresh Ginger ½ Tbsp powdered Turmeric 1/4 cup Coconut Butter (melted) 1/4 cup Cashew Butter 1.5 tsp Ground Cinnamon ½ tsp nutmeg 1/2 tsp Sea Salt Instructions: 1. Preheat oven to 300 F. 2. Whisk together equal parts of ground flax and water. Let the flax mixture sit. 3. Melt the coconut butter over low heat in a pot. Once it is melted, remove the coconut butter from the heat and quickly whisk in cashew butter. Set 3 Tbsp of this mix aside for later as a topping. 4. To a food processor, add dates and pulse to break them up. Add the oats and coconut and pulse again until combined. 5. Add in flax mix, nut butter/ coconut butter mix, shredded carrot, ginger, turmeric, cinnamon and nutmeg pulse until combined but there are still solid bits of carrots. 6. Line a baking tray. Using a spoon, or a medium cookie scoop, take about 2 Tbsp of the dough at a time and work it into a round ball. Repeat this step until all the dough is used. 7. Bake bites in the oven for 15 minutes. 8. Remove the bites from the oven and let them cool thoroughly. You can pop them in the fridge for 10 minutes to speed up this process. Once the bites are cool, drizzle the remaining, now slightly cool but still melted, coconut cashew butter blend over top. *This recipe was adapted from a recipe on our website by Danille Weins.
