Ingredients: 2 lbs ground beef 1 cup seasoned breadcrumbs 2 large eggs 1 packet onion soup mix (1 oz) 1 cup shredded mozzarella cheese ½ cup beef broth 1 large onion, sliced 2 tbsp butter 1 tbsp olive oil 2 tbsp Worcestershire sauce ½ cup ketchup 1 tbsp brown sugar Fresh parsley for garnish Instructions: Preheat oven to 375°F (190°C). In a skillet, sauté onions in butter and olive oil until caramelized (about 15 mins). In a large bowl, mix ground beef, breadcrumbs, eggs, onion soup mix, Worcestershire sauce, and half the caramelized onions. Form a loaf on a lined baking sheet. Mix ketchup and brown sugar; spread over the top of the meatloaf. Bake for 40 mins. Top with remaining caramelized onions and mozzarella; bake another 10 mins until cheese melts.
