It’s not a traditional recipe but I’m an extra crust kind of girl so I wanted to create my own version using my vegan pie crust recipe🍑🥧🌱 For the Crust • 1 + 1/4 cup, unbleached-all purpose flour • 1/2 cup, cold—unsalted vegan butter cut into small pieces • 3-4 Tbsp, cold water • 1 Tbsp, cane sugar • 1/2 tsp, salt *In a large bowl, combine flour, salt & sugar. Using a pastry cutter or fork, add the vegan butter. Add water & mix well. Wrap in parchment paper or plastic wrap, refrigerate for 1/2 hour. For the Filling • 4 cans (15oz.), sliced peaches in lite syrup • 1/2 cup, light brown cane sugar • 1/2 cup, cane sugar • 2 tbs, cinnamon • 1/8-1/4 tsp, nutmeg • 1 TBsp, fresh lemon juice •1 + 1/2 Tbsp, cor
