Recipe ⤵️ * Season a chuck roast and short ribs heavily with salt * Smoke on the grill at 250° for 2-3 hours to get a good bark (about 175° internal temp) * While the meat is marinating, blend together: 1 cup beef broth, 4 chipotles, 4 tbsp of the adobo sauce, 10 garlic cloves, 4 tbsp apple cider vinegar, Juice of 2 lime, 4 tsp cumin, 4 tsp salt, 2 tsp pepper, 1 tsp ground cloves and 4 bay leave * In a large Dutch oven add the beef and then pour the marinade over the meat and add 1/2 cup beef broth * Cover with parchment paper and then add the lid on top. Cook for 2-3 hours or until fall apart tender (typically around 208-210°) * You can test this, by removing 1 piece of meat and seeing if it shreds easily. If it doesn’t, add it
