You know, a lot of steaks are charred on the outside raw on the inside. So, here are the three solutions to fixing that. Take them out an hour or two before you want to cook them. Salt them liberally on both sides. Put them on a rack. Just let them sit. Uh that way the steak's going to start absorbing some of that salt which is great for flavor and also we'll make the juicier. The next thing you want to do is put them in a low 2-75degree oven for 15 minutes 20 minutes. You want to get the internal temperature of the steaks up to 90 to ninety5. When you finish them on the grill, they're only going to be on the grill for a few minutes and you're not going to overcook the exterior by the time the interior comes up to temperature and finally, let it rest maybe 10 or 15 minutes for those juices to get reabsorbed by the protein. So, salt it, let it sit low oven, finish on the grill, or in a skillet.
