Buko pandan is a Filipino dessert flavor that combines coconut and pandan, a sweet-smelling tropical leaf, and it gives desserts a coconutty vanilla type flavor and bright green color. When this butter mochi comes out of the oven it’s super moist and chewy and goes great with a scoop of ice cream. I paired it with ube but vanilla or if you can find lychee ice cream, that would be the best. Seriously so good.

Ingredients
1 box mochiko flour
1 stick unsalted butter, melted
2 cups sugar
4 eggs
2 tsp baking powder
1 12 oz can evaporated milk
1 14 oz can coconut milk
2 tbsp buko pandan extract (can be found at Filipino or Asian market)

Decided to bake something for Mother's Day, and since I had all the ingredients, I made some yummy, chewy mochi cake.
