If you are looking for a quick and easy lunch option then you HAVE to try my PESTO CHICKEN WRAP!! No cooking involved, it makes for the perfect balanced lunch with lots of protein, fibre, and healthy fats!

All you need is:
* whole wheat tortilla wrap
* hummus
* natural deli chicken breast or sliced chicken breast
*  havarti cheese
* coleslaw mix
* spinach finely chopped
* plain Greek yogurt
* pesto
* cherry tomatoes
* Balsamic glaze

A delicious healthy alternative to the typical corn/wheat wrap!

Ingredients:
(Makes 6 medium wraps or 3-4 large wraps - double quantities for more)

250g cottage cheese (about 1 cup)
1 egg
60g oats (about 1/2 cup)
80ml water (about 1/3 cup)

Instructions:

1. Combine all ingredients in a blender and blend until smooth.
2. Heat a non-stick pan over medium heat, lightly greased with cooking spray.
3. Pour 1/4 cup of the batter into the pan, spreading it to the edges. Cook for 3-4 minutes until the bottom is set, then flip and cook for another minute.
4. Cool the pan slightly by running it under cold water between each wrap, making spreading easier.
