TOFU SCIENCE 👨‍🔬 | TOFU SCIENCE 👨‍🔬 Follow Vegan Punks for all the best tofu tips and recipes! It’s been a while since we reminded you to freeze your tofu ❄️ When we... | By Vegan Punks | If you've been told to marinate your tofu for better flavour, we're sorry to break it to you but you've been sold a line unless you've been freezing the tofu as well. In our latest tofu experiment, we're testing whether frozen tofu comes out better than tofu straight out of the fridge when marinated and the results are pretty clear. This is frozen tofu. You can see it's gone a yellow color and is completely solid. Once stored, it looks spongy and water pours out when it's cut. The tofu from the fridge is less spongy and doesn't release much water. We put them both in a sandwich bag and marinated them in the fridge for 1 hour. The color of the freeze tofu is much darker and the fridge tofu is lighter. The freezer one seems to have gathered more of the liquid than the fridge one. We air fried them both for 10 minutes at 190 degrees. The results are clear. The fridge one is soft and spongy and less flavorful because it's all on the outside. The freezer tofu is crispier, the inside is meatier and the marinade has penetrated the tofu much more than the fridge tofu. So there you have it. If you want to marinate tofu, freeze and thaw it first for better flavor and texture.
