Jerusalem Artichokes are a perfect plant for winter food
Do you know this plant that is related to sunflowers? The tubers store well in the ground & the sweetness improves with the extended cold weather. I harvest as needed & they are a good potato substitute & very productive. My favorite way to eat them though is to lacto ferment and eat them as an olive substitute. This is a perfect plant to grow in a time saving garden as it needs very little care and will tolerate most soils & shady areas.
