Quinoa and Chickpea Salad Ingredients: - 1 cup quinoa - 2 cups water - 1 can chickpeas, drained and rinsed - 1/2 cucumber, diced - 1 bell pepper, diced - 1/4 cup red onion, finely chopped - 1/4 cup fresh parsley, chopped - 1/4 cup fresh lemon juice - 2 tbsp olive oil - Salt and pepper to taste Instructions: 1. Rinse quinoa under cold water. In a pot, combine quinoa and water. Bring to a boil, reduce heat, cover and simmer for 15 min. Let cool. 2. In a large bowl, combine cooled quinoa, chickpeas, cucumber, bell pepper, red onion, and parsley. 3. In a small bowl, whisk lemon juice, olive oil, salt and pepper. 4. Pour dressing over salad and toss to combine. Serve chilled. Benefits: Rich in protein, fiber, and antioxidants; supports digestion and heart health.
