I use it a lot because it’s quick and easy. 1️⃣ After bulk fermentation is done and you’ve preshaped your dough, stretch the dough into a square or rectangle. 2️⃣ Grab the top of the dough (the “head”) at the top center and pull it in. 3️⃣ Grab the outside right and left corners (the “shoulders”) of the dough and pull them to the center. 4️⃣ Repeat with the bottom corners of the dough. 5️⃣ Roll the dough up firmly and pinch the outside edges. They are a bit like a cross between a morning roll and a croissant, but are flatter and irregular in shape.
