Ingredients: 4 boneless chicken breasts 2 tbsp olive oil 1 cup mushrooms (sliced) 2 tbsp butter 1 cup shredded mozzarella cheese 1 tsp garlic powder 2 tsp Italian seasoning 1 tbsp fresh parsley (chopped) Salt and pepper to taste Instructions: Preheat oven to 375°F. Sauté mushrooms in butter until tender. Season chicken breasts with garlic powder, Italian seasoning, salt, and pepper. Cut a pocket in each chicken breast and stuff with mushrooms and mozzarella.
