What's the craic? Irish Baker Abroad Chris over here in Denmark and today I thought I'd do some cinnamon rolls. Okay? We're going to do some cinnamon rolls. Okay so I want to do a cinnamon roll that just falls apart. Just incredibly super moist. Okay? Super. I didn't get where I am today without making my cinnamon rolls incredibly super soft and tasty Reggie. Feeling a little trusty are we Germ? So ehm we've got 400 milliliters of milk. Onto about 40 grams of fresh yeast. You can use dry yeast too. Just mix it with your flour beforehand. We're going to add 800 grams of plain flour, all-purpose flour. Got 120 grams of sugar, white granulated sugar and a teaspoon of salt. I just bought this some Cardamom it's optional teaspoon Two large eggs. Hook. So this particular particular eh recipe I would suggest using a mixer for it. Gonna mix this for about 10 minutes. Eh just start off slow. Work your way up to medium and eh 10 minutes. Okay? It's had two minutes already and now another eight. Right that's 10 minutes. Let's just have a look at the dough. We're going to add our butter. You just do this gradually, okay? Got 175 grams of butter, butter, bata. Just add a bit at a time. And we're going to knead it for another 10 minutes or so. We just want to get it nice and strong. Right so that's all our butter in. Leave that about 10 minutes. Get it nice and strong. That's grand. See now it's nice and elastic. It's a beautiful doll. Nice and strong. Moist. Shape it to a ball. And a bowl here. Bit of oil. Just a drop. Get our dough in. And eh we want this to double in size. And eh while that's on the go eh we're going to make our filling. This filling very simple. I've got 150 grams of butter butter bata. You want 150 grams of soft dark brown sugar. And four teaspoons of cinnamon. We're going to kind of use this as a binder. Potato flour. You can also use cornstarch or cornflour as it's called. Want three teaspoons of this. Mix this together to a paste. Alright there we go. That's it. Our beautiful cinnamon paste. Okay that has been an hour. Our dough has doubled in size more or less. Bit of flour. Just gently press the arrow. Fly one on top. Alright that's grand. I'll give you some dimensions for that as well. Okay so that was about 55 to 60 centimetres this way and about 40 to 45 this way. Looks something like this. Next up, get your paste, your cinnamon paste. Get it on. It's grand. Once we get our paste on you just take the top and just fold it over like this. And you just want to roll You can tighten it a little bit as you're as you press it up. Grand. We're going to split this into nine equal pieces. Okay so don't we get our tray? Put them on. Gonna stick this around it just to keep them in. Get a nice shape on the sides. Yeah this ended up being 34 centimetres. So if you have a tin that's about thirty-four, 35 centimetres, a square tin. It's going to fit perfect. You don't even need to use this. They're just kind of flatten out on the sides. So ehm you don't even need one. You don't even need one. We're going to cover this. Alright folks that has been about 35 minutes. These are ready to go in. Gonna brush the top with some egg wash. I've got some fresh whipping cream here. Just going to pour it a bit over the top. Right this icing very simple. I've got 60 grams of icing sugar. I've 60 grams of softened butter butter batter. Packet of cream cheese Philadelphia 200 grams whisk And you just want to whisk this for about a minute, minute and a half. Right that's gone. This doesn't have to be perfect. Me daughter's come home from school now. She's going to love these. Well I might like them too myself so. Look at that. Unbelievable. Alright, give that a go. AP flour 1/4 c. Corn starch Heavy whipping cream added before baking! FILLING INGREDIENTS: 1/2 cup *room temp* salted butter 1/2 cup dark brown 2 tablespoons cinnamon FROSTING INGREDIENTS: 4 ounces softened cream cheese 4 tablespoons browned salted butter 1 tablespoon vanilla bean paste 2 c. Powdered sugar 3 tablespoons milk Instructions: 1. Combine milk, brown sugar, and yeast, then wait 5-10 min until a foamy layer forms on top. 2. Then add in egg, vanilla, salted butter, and half of the flour- mix again for 3 minutes on medium. 3. Add the second half of the flour and the corn starch until the dough comes together. 4. Place the dough in an oiled covered bowl in a warm spot for two hours. 5. Make the filling and frosting while you wait! To make the filling, mix all ingredients into a delicious paste. To make the frosting, brown, the butter until golden and allow it to cool, then cream together all of the ingredients until light and fluffy! 6. Once the dough has doubled in size, knead it 2-3 times on a well floured surface, then roll into a rectangle. 7. Spread filling evenly, avoiding the edges by 1/4 inch 8. Slice and roll, place in a greased 9x13 pan. Spray the top of the cinnamon rolls with vegetable oil, then cover and refrigerate overnight! 9. In the morning, let the cinnamon rolls rest on the counter uncovered while you preheat the oven to 350°. For extra fluffy cinnamon rolls, place them in the oven WHILE it preheats for the first 2 minutes. 10. Pour heavy whipping cream in the creases and bake 18 to 22 minutes. Frost when mostly cooled!
