Chicken Marinade - 500g chicken thigh, cut into bite sized pieces - 2 tbsp olive oil - 1/2 tsp salt - 1/2 tsp black pepper - 1/4 tsp white Pepper - 4 garlic cloves, minced - 1 tsp chilli flakes - Zest of 1 lemon Spicy Garlic Oil - 1 - 2 tbsp olive oil - 6 tbsp butter - 6 garlic cloves, minced - 2 spring onion, chopped - Zest of 1 lemon (and it’s juice) - 1 - 2 red chilli, chopped - 1 tbsp white sesame seeds (optional) - 1 tbsp chilli oil - 1/2 tbsp honey - 1/2 tsp salt Mix chicken with all of the ingredients for the marinade then thread onto bamboo skewers. Set aside for 15 - 20 minutes whilst making the spicy garlic oil. Heat oil and butter in a pan over medium heat then add all the ingredients for the sauce. Cook for 2 minutes until fragrant, then set aside.
