No-Bake, Pistachio filled Chocolate Mochi. Crunchy on the inside, soft and chewy on the outside!! If you make anything is weekend it should be this. 

MOCHI:
1 cup glutinous rice flour
1/3 cup sugar
2 tbsp cocoa powder
30ml heavy cream
200ml milk

PISTACHIO FILLING:
2 tbsp salted butter
80g Kataifi pastry
200g pistachio cream

Toast the kataifi pastry with the butter in a large pan until golden brown. Pour into a bowl and mix in the pistachio cream. Refrigerate.

Combine mochi ingredients in small bowl. Cover bowl with plastic wrap, poke the top, and microwave for 1 min intervals until opaque. 
Let cool enough to handle. Oil your hands and knead until smooth and less sticky, about 5 mins.
