It is velveting. A technique that makes meat extra juicy and tender. I am making chicken and broccoli as a demo but this method works with other proteins as well. Cut the chicken breast into a quarter of an inch thick slices. Then marinate it with one tablespoon of soy sauce, one tablespoon of Chinese cooking wine, two tablespoon of cornstarch, and half of an egg white. Using egg white and cornstarch in the marinade is what we called known as velveting in English. It creates a starchy layer which locks in the juice inside the meat. This is the key to juicy tender stir fry. Combine 2 teaspoon of cornstarch. Half teaspoon of white pepper. Two tablespoon of soy sauce, one tablespoon of oyster sauce, one tablespoon of brown sugar, one teaspoon grated ginger, one teaspoon of grated garlic, half cup of chicken stock, and 1 teaspoon of dark soy sauce into a bowl. Mix well. This stir fry sauce makes a nice gravy that goes perfect with white rice. Heat the wok until smoking hot. Add oil and sear the chicken over high heat for a minute per side or until the meat is golden brown both side. You may need to fry the chicken in two batches. Set the chicken aside. Stir fry the broccoli over medium heat for a few minutes. The wok looks a bit dry that is on purpose because I want the broccoli to be nicely roasted so you can get better flavors. A splash of water and cover it with a lid to create some steam to cook the vegetable through. Introduce the chicken back into the wok and pour in the sauce. Keep stirring until the sauce thickens.
