Served atop a pile of vermicelli noodles, diced cucumber and carrots, this is a great dish to start marinating the day before and quickly cook on a hot skillet or if your beef pierced are large enough, to grill on the BBQ. The combination of citrusy tanginess from the lemongrass and the robust flavor of fish sauce shines in this dish and it’s got enough heat to keep things spicy!

Ingredients
2 lbs skirt steak
3 tbsp sugar
2 stalks lemongrass minced
2-3 cloves garlic
1-2 Thai chilis
1” knob ginger
1 tbsp fish sauce (I always use @redboatfishsauce )
1 tbsp oyster sauce
1 tbsp vegetable oil

1. In a mortar and pestle mash sugar, garlic, ginger, chili and lemongrass into a paste. Trans Lemongrass Beef, Vietnamese Dipping Sauce, Onion Fried, Stir Fry Beef, Beef Bowls, Vermicelli Noodles, Fried Shallots, Skirt Steak, Oyster Sauce
