Ingredients 1 large tortilla 3 eggs 1/4 cup low fat cottage cheese 1/4 tsp salt black pepper, to taste 1/2 cup chopped veggies of choice, I used baby spinach, mushroomed and sun dried tomato 2-3 tbsp cheese Directions Preheat oven to 350 degrees. Press a large tortilla into an 8 inch round pan. I used a springform pan. Add eggs and cottage cheese to the tortilla and mix. Then add salt and pepper and veggies, mix and top with cheese.
