You can add these noodles to soup, stir-fry them or serve with a simple sauce. Noodle Dough - 500g plain flour - 1/2 tsp salt - 6 eggs - Cornstarch, for dusting Hot Oil Sauce (optional) - 2 tsp minced garlic - 2 tsp minced spring onion - 1 tsp chilli flakes - 1 tsp white sesame seeds - 2 tbsp neutral oil - 1 1/2 tbsp light soy sauce - 1 tbsp black vinegar - 1/2 tbsp dark soy sauce Mix flour and salt together on a clean work surface. Make a well in the centre then add in the eggs. Using chopsticks gently break up the eggs, then using your hands working the dough until a shaggy ball. Don’t worry if it gets messy, it will all come together. Knead for 8 - 10
