Color your buttercream with gel or oil based food coloring. I used Royal Blue with a touch of Violet. Don’t worry if it looks pale at this stage. 2. Melt the buttercream in a microwave at 5 second intervals mixing well between each burst. 3. Once melted, pop your buttercream into a blender. You’ll see the color deepen! 4. So here it goes Ingredients Unsalted butter - 454 grams Powdered sugar - 345 grams Light corn syrup - 120 grams Milk - 120 grams Vanilla - measure with your heart Pointers - The butter should be more on the softer side. - Starting with a whisk is a must, to incorporate as much air as possible. - To get rid of clumps, sift the powdered sugar before you use it. - Pour the corn syrup slowly or it will form lumps. - After adding the milk, it takes a few minutes to come together, so be patient. - Use the paddle at low speed, to release unwanted air bubbles. - Don’t forget to scrape the bowl after each step — especially the bottom. As you all have seen in most of my reels I use a blue colored scoop to scoop out frosting. It’s the number 16 dark blue scoop. This is NSF approved as well. The quantity of this scoop is 2oz which is about 57grams. So this is how it goes (between each layer) 4 inch cake - 3/4th scoop (42 grams) 5 inch cake - 1 scoop (57 grams) 6 inch cake - 2 scoops (114 grams) 7 inch cake - 3 scoops (171 grams) 8 inch cake - 4 scoops (228 grams) 9 and 10 inch cake - 5 scoops (285 grams) Using this scoop is extremely convenient - it’s mess free. - I always have a good idea of how much buttercream is going between each layer. - And most importantly, it maintains consistency. Ingredients: - 2 cups unsalted room temperature butter (4 sticks or 452g) - Pinch of salt - 1/2 tsp vanilla extract - 4 1/2 cups powdered sugar (495g) - 1/4 cup cocoa powder (24g) - 1/4 cup + 2 tbsp heavy cream (87mL) Directions: - In the bowl of your stand mixer fitted with a paddle attachment (you can also use an electric hand mixer), whip the room temperature butter on medium speed for ~5 minutes until it is pale in color. - Add a small pinch of salt and the vanilla extract to the bowl.
