Ingredients: - 4 x jelly packs - lime, raspberry, mango, strawberry - 1 x pack of Biscoff biscuits - 120g butter, melted - 500g cream cheese, room temp - 1 Tbls powdered gelatine (dissolved in 1/2 cup boiling water and cooled) - 1/2 tin sweetened condensed milk Mix up each pack of jelly with 1 cup of boiling water to dissolve and set in the fridge until firm. Blitz up the Biscoff biscuits until fine crumbs, then blitz again with melted butter. Press into a lined springform cake tin and chill until firm. Whip cream cheese until smooth, add the sweetened condensed milk and whip again. Repeat with the cooled gelatine. Remove the jelly from containers and chop into large cubes, reserving a little of each and then fold the rest into the cream mix. Spoon into the chilled biscuit crust and add reserved jelly to the top. Then add melted butter and stir by hand or to combine as it’s more powerful). 2. ���Add melted butter to the biscuits and process until combined. 3. ���Take a 24cm springform circular pan and line the base with baking paper - leave some overhanging. Clip in the sides of the pan over the paper. 4. ���Add the biscuit crumb to the pan and start to spread it out over the base evenly with a spoon or your hands. 5. Press the mixture into the pan firmly. Work the crumb as far up the sides of as you can. Refrigerate base while making the filling. 6. ���Rinse food processor bowl. Add the flesh of 4 mangoes, condensed milk, cream, cream cheese and sugar. Blend until very well combined and smooth. 7. ���Pour mixture into the pan. Place in the freezer and after an hour cover well with cling wrap. 8. ���When ready to serve, decorate with thinly sliced mango and toasted coconut. 9. ���Allow to sit out for ten minutes or so to make slicing easier. 10.
